No Bake Peanut Butter Oatmeal Bars

These No Bake Peanut Butter Oatmeal Bars are the kind of recipe every home cook loves to keep on hand—simple, reliable, healthy and irresistibly delicious. Made with pantry staples like creamy peanut butter, flaxseed, hearty oats, hemp hearts and melty chocolate chips, they come together in minutes with no oven required. Perfect for snacking, lunchboxes or an easy make-ahead dessert, these chewy bars strike the ideal balance between wholesome and indulgent, proving that the most satisfying treats are often the easiest to make.

No Bake Peanut Butter Oatmeal Bars
  • 3 cups creamy peanut butter
  • 1 cup honey
  • 1 tsp. vanilla extract
  • 4 cups rolled oats
  • ¼ cup ground flaxseed
  • ¼ cup hemp hearts
  • ¼ tsp. salt
  • 2 cups semi-sweet or dark chocolate chips
  • 2 Tbsp. butter
  • sea salt for topping

Grease a 9×13-inch baking pan with cooking spray, and line with parchment paper, making sure to leave some overhang for easy removal. In a medium bowl, add the peanut butter and honey. Microwave for about 30 seconds to get them warmed a little bit to make them easier to mix. Add the vanilla; whisk well together. Stir until smooth. In a large bowl, mix together the rolled oats, ground flaxseed, hemp hearts and salt. Pour the peanut butter mixture over the dry ingredients, and stir until everything is evenly combined. Press the mixture firmly into the prepared pan, spreading it evenly. In a small bowl, add the chocolate chips and butter. Microwave for 45 seconds and intervals of 15 seconds, stirring between each interval, until the chocolate is smooth. Spread over the bars, and sprinkle with sea salt. Refrigerate for 30–60 minutes, until the chocolate is set. Lift the bars out using the parchment paper, slice into squares and serve.
